코로나19 출현에 따른 외식업체 생존전략 분석

Abstract

With the global proliferation of Corona 19, global economic crisis began with the occurrence of marked decrease in consumption along with global supply shock from the economic perspective. In particular, restaurant business displayed the tendency of rapid decrease in the sales revenue particularly for the Korean food restaurants due to the concerns for Corona 19 infection given the locational characteristic of unspecified multitude having meals in the same location without wearing masks. Accordingly, this study is aimed at establishing desirable countermeasure strategy for the risks of the occurrence of Corona 19 for the Korean food industry through questionnaire survey-based analysis of structural equation with focus on the Korean food restaurants being affected most extensively due to Corona 19 that began to spread in Korea in earnest since the end of February 2020. Results of this study can be summarized as follows: First, it is revealed that (1) maintaining safe distance and (2) hygienic management within the restaurant are the more important factors than hygienic manner in serving customers in order for the Korean food restaurants to elevate the operational performances since the outbreak of Corona 19. Second, it is disclosed that (1) reduction in the overhead costs and (2) sales revenue outside the restaurant are the more important factors than remodeling, temporary closure or operation of only a portion of the restaurant as the means of business management in coping with Corona 19. Third, it was illustrated that organizational management is important for the maintenance of the distance between people and that customer service must be good in order to achieve the desired hygienic management within the restaurant. Fourth, it was analyzed that customer services must be good in order to reduce the overhead costs and to increase sales revenue outside the restaurant. Moreover, it also implied that means of serving customers hygienically such as washing hands, covering mouth with sleeve when coughing, and maintaining cleanliness of the staff’s uniforms, tableware, washroom and interior, etc., and means of business management including remodeling, temporary closure or operation of only a portion of the restaurant, etc. that do not directly affect the sales revenue must not be overlooked. It can be deemed that this study is quite signifiant in that the means of coping with Corona 19 has been analyzed by taking initiative from a new angle with focus on the Korean food restaurants when there are very few preceding researches related to the means of coping with Corona 19 by the restaurant businesses. Nonetheless, since this study limited the scope of research on the means of coping with Corona 19 by the Korean food restaurants, it is anticipated that more diversified researches will be carried out more broadly for the entire range of industries manufacturing, distribution and public sectors, etc. in the follow-up studies. Key words: Corona 19, restaurant business, Korean food restaurants, survival strategy, factor analysis, structural equation|코로나19가 전 세계적으로 확산되면서 경제적인 측면에서도 글로벌 공급 충격과 소비 절벽이 같이 발생하는 글로벌 경제위기가 시작되었다. 특히, 외식업은 불특정 많은 사람들과 한 장소에서 마스크를 쓰지 않고 식사를 하는 장소적 특성으로 인해 코로나19 감염의 우려로 한식업을 중심으로 하는 외식업의 매출이 급감하는 경향을 보여주었다. 이에 본 연구는 최근 2020년 2월 말부터 국내에서 본격적으로 유행하기 시작한 코로나19로 인해 가장 충격을 많이 받고 있는 한식업종을 중심으로 설문조사 기반 구조방정식 분석을 통해 코로나19 발생 리스크에 대한 한식업계의 바람직한 대응 전략을 마련해 보는데 그 목적이 있었다. 본 연구의 연구 결과를 요약하면 다음과 같다. 첫째, 코로나19 발생 후 한식업의 운영성과를 높이기 위해서는 위생적 고객응대 보다 (1)거리유지와 (2)매장내 위생관리가 중요한 요소임이 드러났다. 둘째, 코로나19 대응 경영관리 방안으로는 개보수 및 휴업이나 매장 일부만 운영 등 보다는 (1)고정비 절감과 (2)식당 외 매출이 중요한 요소인 것으로 밝혀졌다. 셋째, 사람간 거리를 유지하기 위해서는 조직관리가 중요하며, 매장 내 위생관리를 잘하려면 고객응대 서비스가 좋아야 함을 보여주었다. 넷째, 고정비 절감과 식당 외 매출을 높이려면 고객응대 서비스가 좋아야 하는 것으로 분석되어졌다. 그렇다고 해서 매출에 직접적인 영향을 주지 않는 손씻기, 기침시 소매로 가리기, 종업원 유니폼 청결, 식기류, 화장실 청결, 인테리어, 청결 등 위생적 고객응대방안과 개보수 및 휴업이나 매장 일부만 운영 등 경영관리 방안도 등한시 해서는 안됨을 시사하고 있다. 본 연구는 외식업의 코로나19 대응 관련 선행연구가 일천한 상황에서 한식업을 중심으로 하는 코로나19 대응방안에 대해 새로운 각도에서 선구적으로 분석되었다는 점에서 그 의미는 상당하다고 볼 수 있다. 그럼에도 불구하고 본 연구는 코로나19에 대한 한식업의 대응 방안으로 연구범위를 한정했기 때문에 후속적인 연구에서는 제조업, 유통업, 공공부문 등 전 산업에 걸쳐 다양한 연구가 폭 넓게 이루어지기를 기대한다.
