연근추출물을 첨가한 약과의 품질 특성

Abstract

오래전부터 전해오는 전통 한식 디저트중 하나인 약과를 본 연구에서는 지질의 산패억제와 항산화에 큰 영향을 미칠 수 있는 연근추출물을 첨가한 약과를 개발하여 우리 전통 다식인 약과를 실험하고, 그 결과를 고찰하고자 하였다. 연근추출물의 가용성 고형분 농도는 시판되는 오렌지주스 정도의 결과가 나타났다. 연근추출물의 항산화능력을 나타내는 연근추출물의 TPC 함량은 86.80, free radical 소거능(DPPH) 값은 15.29, 금속 이온 환원능(FRAP)은 0.52, FTC 값은 40.12 그리고 TBARS 값은 43.27로 나타났다. 이는 연근 추출액에 첨가된 다양한 항산화 물질로 인하여 지질산화를 방지할 수 있을 것으로 추정되며, 이를 이용한 제품 생산시 항산화능력이 충분히 있는 것으로 판단된다. 연근추출물을 첨가한 약과의 수분함량, 기름흡수율, 팽화율, 색도, 경도, 씹힘성, 탄력성, 응집성, 관능검사에 관한 실험결과 대조구와 유의적 차이가 없다는 결과가 도출되어 일반적인 약과의 특성을 저해하지 않고 연근의 항산화능을 약과에 부여할 수 있는 것으로 판단된다. 연근추출물이 함유된 약과의 미세구조를 관찰해보면 연근추출물 첨가량이 많을수록 기공의 수가 증가하는 결과를 보였다. 저장한 약과의 색도를 분석한 결과는 적색도(a)값과 황색도(b)값이 유의적으로 감소하는 것으로 나타났다. 첨가구의 조직감(texture), 경도(hardness) 그리고 응집성(cohesiveness)은 대조구보다 유의적으로 낮았으나 탄성(springiness)의 경우는 처리구가 가장 높은 결과를 보였다. 저장한 약과의 관능검사 결과는 저장 이전보다 외관(appearance), 맛(taste), 색상(color), 향기(flavor)의 평가에서 전반적으로 낮아지는 결과를 보였으나, 첨가구의 감소폭이 대조구보다 유의적으로 낮아 약과의 저장성의 증대효과를 나타냈다. 이상의 결과에서 연근 추출물을 함유한 제품이 높은 항산화성을 보유하며 저장성을 증대에 효과가 있음을 확인 할 수 있었다. 또한 향후 연근을 이용한 보다 다양한 제품들의 연구가 이루어 질것으로 기대된다.

| Yakgwa is one of the traditional Korean-style desserts that have been handed down in Korea for a long time. Therefore, this study is aim to investigate the results of Yakgwa, the Korean traditional tea confectionery, by inventing Yakgwa added with the lotus root extract which can greatly affects antioxidant and inhibition of lipid oxidation. The soluble solids concentration of the lotus root extract was about the result of the commercial orange juice. The results of TPC is 86.80, DPPH radical scavenging ability 15.29, FRAP 0.52, FTC 40.12 and TBARS 43.27 respectively. These values showed the antioxidant activity of lotus root extract. There is a sufficient antioxidant capacity in the production of products using lotus root extract. No significant difference was observed in its moisture content, oil absorption, expansion, color, hardness, chewiness, elasticity, cohesiveness and sensory evaluation of the Yakgwa added with lotus root extract. Therefore the antioxidant ability of the lotus root could be added to the Yakgwa without interfering with the characteristics of the lotus root. Observing the microstructure of Yakgwa added with lotus root extract, the larger the amount of addition, the greater the number of the pore. The redness(a) value and the yellowness(b) value of the stored Yakgwa were significantly decreased sharply. Texture, hardness and cohesiveness of the experimental group were significantly lower than those of the control but the springiness showed the highest result. The results of sensory evaluation of the stored Yakgwa showed lower overall appearance, taste, color and flavor evaluation than before storage. However, it was proved that the storage stability of the Yakgwa was increased. Therefore, it is considered that the Yakgwa added with lotus root extract seems to have the high effect of having antioxidant ability and the storage stability increased. In the future, it will be expected to research the development of various foods by using lotus root.
