사워도우(Sourdough)와 퀴노아 분말을 첨가한 모닝빵의 품질특성 및 항산화성

Abstract

본 연구에서는 빵의 저장성 및 품질유지에 도움이 되는 사워도우(Sourdough)와 우수한 영양학적 가치가 있다고 알려진 퀴노아 분말을 첨가한 모닝빵의 항산화성, 이화학적 특성 및 관능평가를 측정, 평가하였다. 사워도우를 20% 첨가한 모닝빵 반죽에 퀴노아 분말을 0%, 3%, 6%, 9%, 12% 첨가하여 이화학적 특성 및 관능평가를 실시하였고, 퀴노아 분말 12%, 20% 첨가한 모닝빵에 대하여 항균 및 항산화성 분석을 실시하였다. 사워도우 반죽의 pH를 측정한 결과는 매 시간마다 꾸준히 유의적으로 감소하였다. 모닝빵 반죽의 pH는 퀴노아 분말을 첨가할수록 유의적으로 감소하였다. 모닝빵 반죽의 발효시간에 따른 부피 변화는 반죽 직후를 제외한 모든 발효시간에서 시료 간에 유의한 차이가 있었고, 동일한 시료에서도 발효시간에 따라 유의한 차이가 있었다. 모닝빵 반죽의 1차 발효 후 pH 측정 결과는 퀴노아 분말의 첨가량이 증가할수록 낮아졌다. 퀴노아 분말의 첨가량에 따른 모닝빵의 무게, 부피, 비용적, 굽기손실률 측정 결과를 종합해보면, 첨가량이 증가할수록 무게는 증가하였고, 부피, 비용적, 굽기손실률은 감소하였다. 모닝빵의 굽기 후 pH는 대조구가 가장 높았고, 퀴노아 분말을 첨가할수록 pH는 유의적으로 낮아지는 결과를 보였다. 모닝빵의 외관과 미세구조는 퀴노아 분말 첨가량이 증가할수록 색상이 점점 어두워졌으며, 기공의 크기도 작아지고 조직이 일정하지 못하여 시료 간에 유의한 차이가 있었다. 모닝빵의 crust 색도는 퀴노아 분말을 첨가할수록 a값과 b값이 증가하고 L값이 감소하였고, crumb의 색도는 퀴노아 분말을 첨가할수록 a값, b값 ,L값 모두 감소하였다. 모닝빵의 경도와 점착성은 퀴노아 분말의 첨가량이 증가할수록 감소하는 경향을 보이며, 시료간에 유의한 차이가 있었다. 탄력성, 응집성은 시료 간에 유의한 차이가 나타나지 않았으며, 씹힘성은 시료 간에 유의한 차이가 있었다. 수분함량은 퀴노아 분말을 첨가할수록 높아졌다. 모닝빵의 일반미생물 발생 억제 능력을 측정한 결과 저장 10일차에는 미생물 발생을 억제하는 영향이 없었으나, 저장기간이 길어질수록 미생물 발생을 억제하였으며, 저장 23일차에는 첨가구가 대조구에 비하여 현격한 미생물 억제를 하였다. 진균류 발생 억제 능력을 측정한 결과는 퀴노아 분말 30% 첨가구에서만 진균류 발생 억제에 효과적이었다. 퀴노아의 DPPH 자유라디칼소거 활성값 단독으로는 저장기간의 연장에 미치는 영향이 낮으나, DPPH 자유라디칼소거 검출법에 인지되지 않은 항산화, 항균성 천연물질에 의하여 저장기간 연장 효과가 나타나는 것으로 보였다. 퀴노아 분말에 함유되어 있는 주요 항균, 항산화 천연물질은 13종이며, 항균, 항산화성과 관련된 천연물질의 총 감지된 량은 22,518,925 counts (ES-:17,403,958, ES+:5,114,967)가 검출되었다.|This study measured and tested the antioxidant activities, physicochemical properties, and sensory evaluations of sourdough assisting to maintain the storage and quality of bread and morning bread with quinoa powder, which is well-known to have excellent nutritional value. Quinoa powder of 0%, 3%, 6%, 9%, and 12% were added in morning bread dough with the sourdough of 20% to conduct physicochemical properties and sensory evaluations, and it analyzed the antimicrobial and antioxidant activities of morning bread with quinoa powder of 12% and 20%. In measuring the pH of the sourdough, it steadily reduced every hour. The pH of morning bread significantly decreased as the more quinoa powder was added. The volume changes of morning bread had crucial differences between samples by all fermentation times, except right after kneading dough, and the same samples were significantly distinguished by fermentation times. After the first fermentation of morning bread, the outcomes of the pH measurement went down as the more quinoa powder was added. Taking together the measurements, which were the weight and volume of bread and its loss ratio of cost and baking by the addition ratio of quinoa powder, its volume and loss ratio of cost and baking decreased with the more addition while the volume increased. pH had the highest controls after baking morning bread, and pH showed a significant decrease as the more quinoa powder. The appearance and microstructure of morning bread got darker as the more addition of quinoa powder, and there was an important difference between samples because its pore sizes got smaller and the tissues were irregular. As adding more quinoa powder, a and b crust color values of morning bread increased while L value decreased, and all values of a, b, and L decreased as adding more quinoa powder in the crumb color value. The hardness and adhesiveness of morning bread showed a tendency to decline with the more addition of quinoa powder, and there was a significant difference between samples. Its elasticity and cohesion were not different between samples, and the chewiness had an importantly difference. Moisture content increased as the more adding quinoa powder. In measuring the general microbes' generation inhibition ability, even though there was no inhibitory influence on the microbes' generation on the 10th day of storage, the longer the storage period, the more inhibited the occurrence of microbes. Also, additives markedly prohibited microbes on the 23rd day of storage compared to the controls. In measuring dust fungi's generation inhibition ability, the only additive with 30% of quinoa powder was effective to inhibit generating dust fungi. Although single-DPPH free radical scavenging activity value lowly affected the extension of the storage period, it showed there was the extensive effect of the storage period by antioxidant and antibiotics natural materials, which have not perceived in DPPH free radical scavenging Method yet. Thirteen major antibiotics and antioxidant natural materials were included in quinoa powder, and the total amount of perceived natural materials relative to antibiotics and antioxidant was 22,518,925 counts (ES-:17,403,958, ES+:5,114,967).
